Lime & Lima Beans

^ I heard this was once the original title for "Sense & Sensibility"
here's an easy recipe with the instructions in a run on paragraph!


this week I have been eating a stew I made which consists of: 1 C. cooked butter beans, 1 C. cooked garbanzo beans, 4 C. water (more if needed), 2 diced potatoes, 1 diced onion, 2 diced zucchini, 1 chopped carrot, 2 cloves minced garlic, 1 minced serrano chile, salt and pepper to taste, 1 tsp. turmeric or curry powder, 1 Tbsp. prepared mustard, a handful of chopped rutabaga greens (any greeens will do, turnip would be good), a little of each fresh, minced: dill, mint, basil, oregano. Juice of 2 limes, 1 tsp. grated lime peel. In a pot or large saucepan saute potatoes, onions and garlic in either a little broth, water, oil, or wine over medium heat. When onions become translucent add everything except half of herbs and lime juice. Bring to a boil, lower to simmer and cook for 15-20 minutes. Add rest of herbs and lime juice and cook for 5 more minutes. Adjust salt and seasonings to taste, if you want to cook it a bit longer, sure! But it's probably done. I figure everyone knows how to cook their own beans! 

In this photo it's with rice that was cooked with onions, garlic and salt, then while still warm tossed with lemon juice, parsley, olive oil and cucumber. Nice combo.
