3 Easy Tasty Ones

This is a great, easy any time meal.
To 2 cups of cooked, seasoned rice add 1 C. chopped kale... you can also mix leftover rice, kale and a tsp. of two of broth and cook partially covered in the microwave to steam/ heat.
There's a pickle in this photo too- halved radishes, sliced carrots, sliced peperoncini, onions and fennel which you simmer in 1 C. cider vinegar with two thyme sprigs, a few pepper corns, a few allspice berries and salt to taste for 5 minutes, then cool in the brine. I didn't add any sugar but of course you can if you want to cut through the acid a bit.
The patties are made from 1 C. mashed beans with 1/2 C. chopped mushrooms, salt and pepper, 1 Tbsp. tomato paste, 1 tsp. chili or curry powder, a little coconut oil and a few Tbsp. flour, but you can use any binder to hold them together. Cook turning once in a lightly oiled pan until browned on both sides and serve with salsa fresca or caper relish or something.
I know not really a recipe, just more leftovers lol.
