This stew is great- cook
1 C. washed, drained quinoa in 4 C. broth for 10 minutes at a simmer
add 1 C. sliced okra
1 diced onion
2 minced garlic cloves
1 C. diced tomato
1 chopped carrot
1/2 C. chopped red and green bell peppers
1 minced jalapeno
a handful of chopped herbs
salt and pepper to taste
a little smoked paprika and allspice
continue to cook for 30 minutes, add more liquid if necessary
For a nice cheez for a cheez sandwich soak 1 C. cashews and 1/4 C. walnuts in water to cover overnight, then blend that with two peeled garlic cloves, a dash of smoke or smoky seasoning, 2 Tbsp. vinegar, 1 Tbsp. mustard, rather a lot of salt to taste, 1/4 C. sauerkraut, 1/4 C. nutritional yeast and 1/2 tsp. turmeric- while blending this drizzle in 1/4 C. of oil until smooth. You can add a thickener (such as a flour or small amount of starch) and heat it for a few minutes for a more solid texture but it's not necessary. I just use the soaking water but some people throw it out, you can put in a milk or other liquid if you do that.
Spread that on whole grain bread and make your sandwich and cook it in a skillet, coating both sides with oil and turning until browned on both sides.
I like to add serrano pickle to this sandwich which is very simple- slice several serrano peppers, a little bit of carrot and some onion and simmer in a mix of vinegar and salt broth to cover with a few crushed dried coriander berries and black pepper for about 5 minutes. Cover and turn off heat and let stand 15 minutes the transfer to a container and put it in the fridge. It's good on this particular sandwich.
