Apple Phyllo Pastry

You will also need oil or/and margarine, and additional sugar for this, plus the following...

Simmer this in a pan until apples are a bit soft-
4 C. diced apples
1/3 C. sugar
1/4 C. brown sugar
1 tsp/ ground cinnamon
a few pinches salt
1 Tbsp. lemon juice
1 Tbsp. sifted flour
1 or 2 Tbsp. oil or margarine
1 tsp. vanilla
2 Tbsp. soy or almond milk
a few drops of rosewater

set aside.
Prepare some oil or melted margarine or combo and set in a cup with a pastry brush.
Have a cup of sugar and your phyllo dough ready.
Heat oven to 400 degrees.
Brush some oil in a 9 x 13 pan
Lay 2 sheets of phyllo to cover and brush with oil and sprinkle with a bit of sugar. Repeat with 2 more. Add apple mixture and spread evenly.
Repeat the with 2 more layers of phyllo, and again. You can add more below or on top than this, as long as you are doing the oil brush they should get crispy.
Finish with a layer of 2 sheets, light brush with oil and a sprinkle of sugar. You can sprinkle a little cinnamon too if you wish.
You will need to cut or score with a knife in the pattern you want them cut in before baking in order to avoid a lot of flaking and tearing later on.
Bake for about 20 minutes or until browned nicely and crispy.
