Pancake Trifle

This is a nice picnic or brunch dish, gluten free in this case.



I'm going to do that annoying thing I like to do and divide this up into components so you have to look at the whole thing to know all of the ingredients.
Anyway

Lemon Curd:
1/2 C. lemon juice
1 C. sugar
1/2 C. almond or coconut milk
1 Tbsp. oil or margarine (optional really)
pinch salt
1 Tbsp. cornstarch (or other favorite starch)
1 tsp. grated lemon peel

Mix all of this together and heat to a simmer, lower heat, stirring and cook for several minutes until it starts to thicken. Add more of whatever until you're satisfied and chill until needed.

Whipped Skreem:
2 C. almond or coconut milk
2 Tbsp. lemon juice
1/4 C. sugar
1/4 C. oil
1/4 C. cornstarch or egg replacer
1 tsp. vanillaC
1/2 tsp. lemon zest, grated
pinch of salt

This time mix all but the lemon zest and vanilla and cook as above, then add vanilla & lemon zest, mix in and chill until needed. Whip it before you apply.

Pancakes:
1 C. sorghum flour
1 C. brown rice flour
1/2 C. almond flour
1/2 C. golden flax meal
1/4 C. tapioca flour
1 tsp. salt (use some black salt for an eggy flavor)
1/4 C. sugar
1 tsp. grated lemon zest
2 tsp. baking powder
1 1/4 C. almond or coconut milk
1/2 C. water, more as needed
1/4 C. lemon juice
1 tsp. vanilla
2 Tbsp. oil or melted margarine

Mix dry ingredients together, pour in the wet and make a good batter, use more liquid if needed. Adjust to taste. Cook by spreading 1/2 C.. batter in a greased skillet over medium-high, turning once until browned and hopefully slightly crispy here and there. Should make 7 or 8 of them. Thickness is up to you. Use more oil to cook if you would rather fry the shit out of them.

And you will also need:
thinly cut lemon slices, seeded
stemmed, halved strawberries

Dip these in sugar, as much fruit as you want, sky's the limit!

Powdered sugar wouldn't hurt to have on hand for this either.

Lay some fruit down in a trifle dish, I would probably do mostly do strawberries for the layers, leaving the majority of lemon slices for the top.
Next tear up 1/3 of pancake into pieces and put them in. Dust with powdered sugar. Next more fruit, then 1/2 of lemon curd, then 1/3 of whipped cream.
Then more pancake, powdered sugar, fruit, rest of lemon curd & 1/3 whipped kreem.
And then at last the rest of the pancake, some powdered sugar, the rest of the whipped kreem and the rest of the fruit, attractively of course. Chill & serve.
