Jicama Waldorf

Here's an easy but delicious one, good for potlucks and outdoor events.
You will need:

2 C. diced jicama
1 diced apple (your favorite!)
1/3 D. minced red onion
1/4 C. dried blueberries, cherries, currants or golden raisins
1/2 C. chopped walnuts, pecans or shelled pistachios
1 C. chopped red cabbage
1/2 C. chopped celery
4 seedless mandarin oranges, peeled and separated into wedges
2 Tbsp. minced cilantro
1 Tbsp. minced parsley
a little minced jalapeno or other chile doesn't hurt
1 tsp. smoky chili powder
1/2 tsp. turmeric or curry powder
salt and pepper to taste

dressing;
2-3 Tbsp. olive or avocado oil
2 Tbsp. lime juice
1/2 tsp. grated lime peel
1 garlic clove
1 tsp. prepared mustard
1/4 tsp. crushed coriander berries
1/2 tsp. salt (more or less to taste)
optional: a little dill

Blend dressing ingredients, adjust seasonings to taste and set aside. Toss all of the non-dressing ingredients together.
Next of course, mix in the salad dressing to your fine bowl of jicama salad. Chill for a bit to let the flavors mingle. Allow to sit out for a little while before serving so it isn't too terribly cold, around 15-20 minutes is fine and give it a good stir.
