Here's a nice vegan potato salad and a watermelon drink for your special July 4th funday!
Potato Fennel Salad
2 lbs. cooked red potatoes, diced
1 C. thinly shaved fennel
1/2 C. diced red onion
1/2 C. roasted red peppers, chopped
1/4 C. chopped pitted olives (something fancy)
1/4 C. toasted chopped hazelnuts
2 minced garlic cloves
2 Tbsp. lemon juice
1 Tbsp. olive oil
1 Tbsp. prepared mustard
2 tsp. tahini
smoked salt and pepper to taste
Blend garlic, lemon juice, olive oil, mustard and tahini with some salt and pepper. Pour over the other
ingredients and toss. Season more to taste.
Watermelon Lemonade, Bouncy
1/2 C. lemon juice
2 C. seeded watermelon
2 Tbsp. sugar or agave (or to taste)
1 tsp. vanilla
1 C. fizzy lemon water (san pelligrino comes to mind)
sprig of thyme for each glass
melon balls and lemon slices for garnish
Blend watermelon, sugar, vanilla and lemon juice. Pour over ice, garnish and add fizzy lemon beverage.
