Vegan Breakfast Patties


1 C. Sunflower Seeds (or use a combination of these and nuts)
1/2 C. Cooked Beans (the type used changes the color of the "sausages")
1 to 2 Tbsp. Tamari or Soy Sauce
1 Small Tomato (Chopped) or 2 Tbsp. Tomato Paste
1/4 C. Chopped Onion
1 or 2 Garlic Cloves
2 Tbsp. Cornstarch or other thickener
Spices to taste- cumin, sage, fennel seed, oregano, allspice
* some mushrooms may be added
* a little oil if you wish

Mix all together in a food processor until well blended. It can be a little chunky, doesn't need to be completely smooth. Drop 2 Tbsp.-sized dollops onto a lightly greased (use spray or a brush) pan over medium heat and flatten with a spatula. Cook until browned or slightly blackened on the bottom, flip and cook the other side. You can turn these into "burgers" simply by making them larger and adjusting the seasonings.

Good variations- Blackeyed Peas and Pecans (liquid smoke, bourbon and cherries make good additions); Brazil Nuts and Black Beans (with chili powder, lime peel and ginger, swell!); Cannelini and Sunflower Seeds (with Italian herbs); Almonds and Fava Beans (with lemon, sumac and tahini added). Endless possibilities.
They may also be baked by litely basting with oil (or not) and baking at 400 degrees for 15-20 minutes.
