Peppermint Hot Chocolate

I really like hot chocolate, but usually only if I make it.
Here's  a nice peppermint one, pretty easy, rich and vegan just the way you all like it...





You will need:
1 1/4 C. coconut milk
1 1/4 C. cashew or almond milk
1/3 C. to 1/2 C. cocoa powder
2 oz. bittersweet chocolate, chopped
1/4-1/3 C. sugar (more if you like sweeter)
pinch or two of salt
1/2 tsp. vanilla
several drops of peppermint flavoring (to taste)
candy canes of course

Begin by melting the chocolate in a pan in 1/4 C. of one of the milks. Stir gently until melted, yes you can do it in a double boiler. Slowly add the rest of the milks and the cocoa powder, whisking until it's all in there. Add salt and sugar and stir. Bring to a simmer and let it ride for several minutes. Add vanilla. Turn off heat and stir in peppermint flavor.
Serve in cups or heat resistant mugs with candy canes.
More cocoa powder will make it thicker, but then you will need more sugar probably. You can also thicken it with a starch just be sure to mix a little of that with liquid off to the side and whisk it in rather than just throwing it in the pan (which will tend to create lumps).
