Tasty and Perky Green Tofu Salad!


This is another entertaining recipe from our presentation in Atlanta. Just made it again recently, has a good fresh, bright taste and the chayote keeps its bounce.

Chayote, Tomatillo, Tofu Salad

1 lb. firm tofu, drained and chopped
1 lb. peeled diced tomatillos
2 diced chayotes
1 small diced white onion
2 minced garlic cloves
1 diced green bell pepper
1 minced Serrano or jalapeno
Chili powder, salt, pepper, cumin, powdered lime peel to taste
A little fresh oregano
A little minced sage
Juice of 2 limes
A few Tbsp. olive oil for frying

Start by sautéing the tofu in oil with a little seasoning until it begins to brown, add the rest but the lime juice and cook for 10 minutes.
Drain liquid off and toss with more seasonings to taste and as much lime juice as you wish. Add some fresh herbs and pumpkin seeds if desired.
Add arugula, corn and cooked beans to flesh it out if you wish or roasted red bell peppers or heirloom tomatoes for color. Diced jicama is another fine addition.
