spring

Thanks to everyone that came to the events in MPLS and Shakopee that went well!

April something- May something- I'm catering the bicycle presentations again in the Southeast and Midwest this time, bike afficianados and transportation activists will attend. On some of the dayz off I will be doing other events, more on that later.
Just made new additions to "So Raw..."- it did better than expected and thus will become even more of a book and be re-released soon.
Summertime, a few short trips will be in order
Other new stuff coming down the pike as well
and probably some new music before too long, we shall see.

Chkn Baked Okra with Tomatoes
3 C. sliced okra- coat them in a light dressing of oil and lemon juice, then a mix of soy and rice flour with some curry powder, cumin, ground coriander, chili powder, salt and pepper, oregano, paprika and garlic powder and a little allspice
take soy protein crumbles and reconstitute them in vegetable broth with a little extra salt and garlic powder, then drain the liquid off
coat a baking pan in oil and put the coated okra and soy protein on there, with some minced garlic, green onions and nutritional yeast and bake that for 30 minutes at 400degrees.
Then add more seasonings, turn the okra and drizzle with a bit more oil and bake for another 20 minutes or so.
When it is all cooked, season again to taste, add 2 chopped tomatoes and a mix of parsley, cilantro and green onions.
