 Today is national sticky bun day, so I'm sharing my coconut roll recipe. Also, check after the recipe for the link to the GoFundMe for Earthbound Cafe, a collaborative space we are working on in Billings, Montana. Plz contribute if you can, thank you!

Coconut Rolls-

2 1/2 C. flour plus some to roll

1/2 C. warm water or coconut milk or combo (more or less)

1 1/2 tsp. dry yeast

1 tsp. vanilla

1/4 C. sugar

1/2 tsp. salt

a little oil or margarine to coat dough

Filling/topping-

1/2 C. brown sugar

1 C. coconut flakes

2-3 Tbsp. sugar

salt to taste

1/3 C. margarine

several Tbsp. coconut milk

1 tsp. vanilla

Plus extra of all of those to sprinkle on top


Mix yeast with warm water and 1/4 C. sugar. Let stand in warm place 10 minutes. Add in flour, 1/2 tsp. salt, 1 tsp. vanilla, 1/2 tsp. baking powder and mix to make a dough. Add more liquid if needed. Work on a lightly floured board for a few minutes to make a nice smooth ball. Grease and place in a bowl, covered, to rise and rest for 1 to 2 hours.

Punch down and roll out on a floured board to make a nice rectangle, about 1/4" thick. Mix filling ingredients to make a paste and slather all of that evenly on the dough. Add more of one thing or another if you like. Roll up tightly and cut into even pieces, like you would pinwheels. Size really depends on the size of your pans- muffin tins and deep ones preferably, you turn the dough in with one of the spiral sides up (and the other down), and you want it to fill the tin up about halfway or slightly more. Grease or line your muffin tins first, then put these in there. Let this rise in a warm place for 1 hour, then sprinkle with extra of the topping ingredients to your taste and look schematics. Let this rise a bit longer, while you preheat an oven to 375 degrees. Bake in there for around 22-25 minutes. Depending on how your oven is, may take a bit longer. Hot tip- if they are really risen up and above or very close to the tops of your pans, consider placing a baking sheet under as a catch when it goes in the oven.
