Recipe Ideas for some vegan party dips & spreads from the Wild Wares Popup Market
Dips
Three Great & Easy Dips/Spreads
Lentil Date Kalamata :
Mix & mash-
1/2 C. pitted chopped Kalamata olives
1 C. cooked mashed red lentils
1/4 C. pitted chopped dates
1 to 2 Tbsp. balsamic vinegar
2 or 3 Tbsp. olive oil
salt to taste
2 Tbsp. tomato paste
A little each of dill and sumac
You can use other seasonings as well, particularly zahter is good in this.
Another good one is a chili garlic powder with orange and lemon zest in it.
Chickpea Chorizo Spread:
Mix and mash-
1 C. cooked mashed chickpeas
1/2 C. soy chorizo
1 Tbsp. minced herbs (epazote, cilantro, thyme, basil are good choices)
1/4 C. minced onion
2 minced garlic cloves
2-3 Tbsp. olive oil
salt to taste
Chile sauce, chile powder or other heat to taste
A squeeze of lemon juice or some lemon pepper
Cheezy White Bean Spread:
Mix and mash-
1 1/4 C. cooked mashed white beans
1 Tbsp. vinegar
A touch of smoke (can use smoked salt)
salt to taste
2-3 Tbsp. olive oil
1 tsp. bouillon paste- onion or garlic works great
Pinch curry powder
1/4 C. nutritional yeast
3 minced garlic cloves
1 Tbsp. mustard (horseradish, garlic or Dijon are all great)
Play around with the proportions on this one.
All of these are good with crudités, crackers, flatbread, on sandwiches, canapés or however. And of course if you let them sit to flavor up a bit even better!
