Well, this looks healthy



Salt and pepper cashews you can buy at the store I suppose, meanwhile creaming kale is easy, begin sauteeing in a little oil with garlic and salt then mix together on the side your favorite "milk" with maybe a little salt, nutritional yeast, other seasonings you like and a bit of lemon juice and you can also add a small amount of thickener, such as flour or a starch of whatever type, whisk that together and after the kale has been cooking for about 5-6 minutes, pour that over the top and stir, and then simmer for a couple of minutes and remove from heat.
Mashed sweet potatoes sometimes seem to need more body and texture to me, thus I have started adding polenta or cornmeal to the proceeding, if you're using a finer cornmeal you can just add it to the boiling sweet potatoes (using only as much water or broth as necessary) and then mash it all together once the sweeps are cooked (that's my new name for them, do you like it?). I seasoned using ginger, salt, a little margarine and a dash or two of bitters. Pretty good. If you're doing polenta or a coarser cornmeal (or oats even), you will want to do that separately and then mash it all together. I felt it made them feel a lot more pleasing. Anyway, there's that!
