Savory Mung Bean Dumpling in Gravy (oil free if you play your cards right!)

Savory Mung Bean Dumpling in Its Own Gravy

Mix/sort of mash:
1 C. cooked mung beans
¼ C. diced carrots
1/3 C. chopped daikon
¼ C. chopped onion
1 minced garlic clove
Salt, pepper, any herbs and spices to taste
A little lemon juice or cider vinegar
Mushrooms or cabbage if you like

Wonton wrappers (wheat/tapioca/rice/doesn’t really matter)

Stuff and roll wonton wrappers with the mung bean mixture, then cook in the following, broth with acoutrements, turning once…

Broth (or water mixed with tamari or Bragg’s or something) to cover dumplings halfway, about a cup or so
A little garlic
Some sliced onion
Salt and pepper to taste
Mushrooms if you like

It will make its own gravy, add a little more liquid or nutritional yeast or something if need be for more or less thickness. The following can be dolloped on top for an extra kick…

For an extra, spicy sauce, ground toasted chili, garlic, broth, lemon or lime juice, salt and pepper and minced herbs mixed together to taste

They might start to fall apart as they cook (usually only on one side), that's fine, you can arrange them to hide it or flaunt it on the plate- Buck the trend!

This is three things- good, easy and cheap.
