Vegan Blackberry Ice Cream
Here's something summery!
1 1/2 C. vanilla soy creamer or coconut milk
1 C. (or more) fresh or frozen blackberries
1/3 C. (or less) sugar or favorite sweetener
a dash of lemon or lime juice
2 Tbsp. lemon vodka
1/2 tsp. ginger
You'll want to put it in the freezer and stir every half hour until frozen. Serve with blackberries and some jam mixed with cocoa and vodka or creme de cassis. Add some shaved chocolate and lime peel and hey you're all set.
Great summer treat, vegan or otherwise.
The more blackberries the better, and it also works with strawberries, huckleberries, mango or just about anything else.
