Money Savers

The first thing I would advise you to do is to save veg ends, peels,
stems of greens and liquid from canned items. You can make a
broth out of canned liquid. For veg ends and peels simmer one
cup veg to 6-8 cups water with salt to taste for 20-30 minutes
then either strain or purée/ hit with an immersion blender.

STEMS FROM GREENS-
Chop these up- to make a pesto blend 1 cup stems with a few
Tbsp. oil or broth, couple cloves of garlic, salt, a little lemon
juice or vinegar, a handful of herbs if you have them, add a few
Tbsp. nuts or seeds if you like to boost nutritional value. Add
this to any boring thing like beans, soup, corn mush, etc.

Add chopped stems to rice while cooking, that’s another idea
Particularly good with golden raisins, curry powder, sautéed
onions and garlic as well.

Chop the stems and sauté and add to corn mush, grits or oatmeal.
This is good with other sautéed vegetables or cooked beans added
in as well.

LEFTOVER RICE-
Leave in fridge overnight, season and add a little broth and
mush into a ball. Have with broth and beans or vegetables.
Make smaller balls and bake or fry them. You can coat with
breadcrumbs, seasoned flour or cornmeal and then bake or fry
for tasty little croquettes or dumplings. Make into sticks and
coat and fry or bake and make “fish sticks”.
Cook random veg such as zucchini and onion and garlic in
6 cups broth. Add 1 or 2 cups leftover rice, herbs and salt to
taste. Simmer for 15 minutes and add a couple of Tbsp. lemon
juice. Somewhat similar to avgolemono.
